Who doesn’t love brunch food?! Here’s a healthier take on comfort food for the weekends!
Scrambled “Eggs” Another Way
½ cup onion, chopped
2 Tbsp. oil
2 cups firm tofu
2 Tbsp. chives, chopped
1 Tbsp. poultry seasoning
½ tsp. onion powder
1 tsp. nutritional yeast flakes
1 tsp. garlic powder
1 tsp. tumeric
½ tsp. lemon juice or salt
Sauté onion, water, and oil in a pan. Discard the water in the tofu package. Add tofu ot the pan and mash with a fork until scrambled. Add chives, poultry seasoning, onion powder, yeast flakes, garlic powder, tumeric, and lemon juice or salt. Heat until flavors are blended.
